What is ramen?
Ramen is a Japanese noodle dish built on a rich, slow-cooked broth – typically miso, shoyu, tonkotsu, or shio – topped with chashu, soft egg, scallions, and more. At Tochi, every broth is forged from scratch, not poured from a bag.

Tonkotsu is a rich, creamy broth made by boiling pork bones for hours until collagen breaks down into a milky, umami-forward base. It's one of our most popular bowls.
